Description of Galangal
Galangal or Langkwas (Alipinia galanga)is a
ginger-like root which is creamy white in colour and with a delicate flavour.
This member of the ginger family has a pungency and tang that is quite unlike
that of the common ginger (Zingiber officinale).
Galangal is too spicy to be eaten raw, and is used in dishes in slices,
chunks or pounded to a paste for the various local curries and side dishes.
