Description of Garlic
Garlic (Allium sativum) is a member of the same botanical family as onions, leeks and spring onions.
More than one type of garlic is sold in Southeast Asian markets; locally grown garlic cloves are
usually only half the size of their Western counterparts. In Asia, garlic is used in large amounts, particularly in Thai and
Korean cooking. In addition to being used whole, it is commonly pounded as part of a seasoning paste, chopped and added
to stir-fry dishes and stews, sliced and deep-fried until crisp, and as a savoury garnish for vegetables, soups and noodles.
